- 7fresh tiny green chilies · chopped
- 2 tbspgarlic · chopped
- 2 tbspshallots · chopped
- 1 tbsplemon grass · chopped
- 1/2 tspgalanga (Thai ginger) · chopped
- 1 tspcoriander root · chopped
- 1/2 tspkaffir lime peel · chopped
- 1 tspturmeric · chopped
- 1/2 tsppeppercorns · roasted
- 2 tspcoriander seeds · roasted
- 1 tspcumin seeds · roasted
- 1/2 tspsalt
- 1/2 tspshrimp paste
Method

Put peppercorns, coriander seeds and cumin seeds in a mortar, pound well.

Add the remaining ingredients except shrimp paste, pound until mixed well.

Add shrimp paste, pound until fine and smooth.
