A traditional Thai green curry paste (Nam-phrik kaeng khiaw-waan) made by pounding fresh green chilies with aromatic herbs and spices in a mortar until fine and smooth.

  • 7fresh tiny green chilies · chopped
  • 2 tbspgarlic · chopped
  • 2 tbspshallots · chopped
  • 1 tbsplemon grass · chopped
  • 1/2 tspgalanga (Thai ginger) · chopped
  • 1 tspcoriander root · chopped
  • 1/2 tspkaffir lime peel · chopped
  • 1 tspturmeric · chopped
  • 1/2 tsppeppercorns · roasted
  • 2 tspcoriander seeds · roasted
  • 1 tspcumin seeds · roasted
  • 1/2 tspsalt
  • 1/2 tspshrimp paste

Method

    Put peppercorns, coriander seeds and cumin seeds in a mortar, pound well.

    Add the remaining ingredients except shrimp paste, pound until mixed well.

    Add shrimp paste, pound until fine and smooth.
