Thai style fried noodles with chicken (Pad Thai)

- 50 gnarrow rice noodles
- 30 gchicken · sliced into small strips (or prawns)
- 20 ghard or firm tofu · sliced into small pieces
- 10 gChinese chives or spring onion · cut into 3 cm. lengths
- 30 gbean sprouts or cabbage
- 1 tspchopped shallot
- 1 tspdried shrimp
- 1 tsppickled radish
- 1egg
- 2 tbspcooking oil
- 1 tbspoyster sauce · Veg.: mushroom sauce
- 1 tbspfish sauce · Veg.: soy sauce
- 1 tsptamarind sauce
- 1 tspsugar
- ¼ cupwater
Method

Fry tofu until lightly golden. Add shallot and chicken in, fry until fragrant.

Break the egg in, and turn them over.

Add the noodles, dried shrimp, pickled radish and water, stir well.

Season with oyster sauce, fish sauce, tamarind sauce, sugar and stir until the noodles is tender.

Add bean sprouts, Chinese chives and mix them together.
